A very quick and easy weeknight dinner for us is Mexican. I like to do a make-your-own taco or burrito bar. Usually it consists of taco shells or tortillas, black beans, refried beans, rice, and freshly grated Monterey Jack cheese. If I have extra time, I might make Quorn chik’n tenders in taco seasoning. (But quite honestly, we get a ton of protein from the beans.)
So how in the world do I keep track of how many carbs Q has had when something is make-your-own like this?
I weigh out her allotted portion of each of the items into small bowls and let her roll her own burritos. If there is a bit left over, she eats the ingredient as a stand alone item. If she wants more of something, I can weigh out another bowl for her.
Weighing it out and counting the carbs ahead of the meal allows me to actually sit down and eat my own burrito while it’s hot…if I’m lucky!
